Estate Shiraz

Estate Shiraz Our Shiraz fruit is picked in late March or early April depending on the vintage conditions and is handled in small batches in the winery at Sanguine Estate. Following light crushing and destemming the wine is naturally fermented with natural yeasts from the vineyard in small open fermenters. After approximately a week, batches of the wine are free run into new French barriques for barrel fermentation. The remainder is kept on skins for around 10 days to begin fermentation. When fermentation begins the wine is moved by gravity, to avoid pump shock, into aged French oak barriques. The Shiraz spends 20 – 22 months maturing in barrels.

Estate Shiraz 2009

The 2009 vintage began with very dry conditions but rain in December supported the  fruit through another hot, dry season until an early harvest in March. The reduced crop of small, intensely flavoured berries has produced a spicy wine with predominantly dark berry aromas typical of the Heathcote terroir.

Estate Shiraz 2008

A deeply coloured full-bodied wine, with abundant black fruits in the bouquet. Flavours of plum and  blackberries are evident on the palate enhanced with black pepper and spice. This luscious, balanced wine is intense and concentrated. The wine is drinking beautifully now and due to its fine tannin structure will continue to age well over the next decade.

Estate Shiraz 2007

The 2007 season saw frost and drought with an earlier than usual vintage in late March. The dry grown grapes were hand picked and barrel fermented with the fruit’s natural yeasts in a blend of new French oak barriques, and  aged oak. This wine is the result of the careful selection and blending of barrels in December 2008. The rich black fruit flavours from our young vine fruit is balanced with savoury notes of spice and pepper to add depth and character from the original vines. The 07 Shiraz is a dry, elegant and beautifully balanced wine which shines when matched with food and will gain in complexity as it ages.
