The Product

The wine is made at John Ellis’s Hanging Rock Winery. The Shiraz for vintages up to 2004 has been matured for 21 months in 225 litre casks, consisting of half new and half one year old American oak. Future vintages will incorporate the use of French oak. The alcohol content ranges from 14 to 15%, depending on seasonal influences, which cause greater variation at She Oak Hill than in vineyards where standardization is maintained by irrigation. 

Our aim is to have a Shiraz with low residual sugar, and firm but fine tannin that develops finesse with age and makes for long life with cellaring. 

The chardonnay is harvested in early March, about three weeks before the Shiraz, and is matured in one-year-old French oak for 9 months.

The highlight of the 2006 harvest was the picking of fruit from the 30 year old Shiraz vines with a view to presenting this fruit under the She Oak Hill label for the first time in 20 years.

The current yield is approximately 500 cases of Shiraz, and 200 cases of chardonnay from the New Block.  When the 2006 Old Block Shiraz is released there will be approximately 100 cases available.
